Is there a more summery recipe than pineapple with shrimp? They are the main ingredients of the Tropical Shrimp recipe! It is basically composed of shrimp made in seasoning, with milk cream and served inside a pineapple.
It's a perfect dish to be served in summer with a side of rice.
The strong and striking shrimp flavor is complemented by the citrus and sweetness of the pineapple. The recipe is really delicious! And it's super easy to do.

1 cup of rice

1 large pineapple

400 ml of coconut milk

1 can of sour cream

500 g Copacol Red Shrimp, shelled and headless

2 tablespoons of corn oil

1 onion

2 garlic cloves,

Parsley and chives to taste

Salt and black pepper to taste

100 g of catupiry cheese

100 g grated mozzarella

Cut the pineapple in half lengthwise with the skin and the crown.

Remove the core and chop into cubes, set aside.

In a pan, heat the oil and sauté the Copacol Shrimps, season with salt, pepper and minced garlic, when it is pink, remove from the pan and set aside.

In the same pan, brown the chopped onion and add the Arroz Minda and the water, let it cook.

When it's cooked, add the coconut milk, chopped pineapple, cream, shrimp, parsley and chives. Shake well.

Fill the pineapples and cover with the catupiry, sprinkle grated mozzarella and take it to the oven for fixings.
